Cottage Cheese and Vegetable Medley - The Cheese Shark

This is a refreshing summer dish in a unique presentation. It combines the flavour of red beets, carrots, and lettuce with protein-rich cottage cheese.

Cottage Cheese and Vegetable Medley

Makes 4 servings.
Preparation time about 20 minutes, about 50 minutes including the cooking time for the red beets.

Ingredients:

  • 4 medium sized carrots
  • 4 medium sized red beets
  • 1 cup of cottage cheese
  • 2 tbsp of maple syrup or honey
  • 2 tsp freshly grated ginger
  • 1/4 tsp of Sambal Oelek (or a hot sauce of your choice)
  • 1/2 tsp of salt

Tools needed:

  • Vegetable peeler
  • Course grater for the beets
  • Fine grater for the ginger
  • A small bowl

Procedure:

  • Wash the beets and cut off the stems.
  • Boil the beets for about 30 minutes until they begin to get soft in the center. Don’t make them too soft as they will be hard to grate.
  • Peel the carrots and cut them lengthwise in half.
  • With the peeler make strips starting at the cut side. This will make wide strips.
  • Place the strips into boiling water for 2 minutes, then place in cold water.
  • Line the bowl with the carrot strips. Make sure to leave extra hanging over the edges. You can use the same bowl to make all 4 dishes.

  • Once the beets are cooked place them in cold water. Then peel and grate them.
  • Mix in the cottage cheese, ginger, honey, Sambal Oelek, and salt.
  • Place the mix into the bowl lined with the carrot strips.
  • Close it off with the overhanging strips.

  • Flip the bowl onto a plate and remove the bowl.
  • Add a salad of your choice and serve with more cottage cheese and crackers.
