Greek Salad with Pita Bread - The Cheese Shark

Greek salad is a summertime favourite. Add your own pita bread and tzatziki dip and it will make a full meal. Have you ever thought about making your own feta? We explain it here. Or how make your own Greek yogurt, we explain it here. For this Greek salad make sure to choose fresh local veggies, Greek yogurt for the dip, and artisan feta. Personally I think goat or sheep feta suits a Greek salad the best.

Greek Salad with Pita Bread

Serves 4
Prep time 30 minutes

Tools needed:

  • Cutting board
  • Sharp knife
  • Baking sheet and parchment paper

Ingredients for the salad:

  • 8 mini cucumbers
  • 2 orange and 1 yellow pepper, chopped
  • 1 medium onion, chopped
  • 1 lb of cherry tomatoes, cut in half
  • 200 g/ 8 oz feta cut into 1/4 inch slices
  • 2 tsp of oregano
  • ½ cup of extra virgin olive oil
  • 2 tbsp of red wine vinegar
  • ¼ tsp of salt
  • 1 garlic clove, finely chopped
  • Black pepper to taste

Ingredients for Tzatziki Dip:

  • 1 cup of Greek yogurt (5%, 2%, or fat-free works)
  • 1 mini cucumber, washed, dried and grated
  • 1 pressed garlic clove
  • 1/2 tsp of fresh dill
  • Pepper to taste

Ingredients for pita bread:

  • 3 cups of all-purpose flour
  • 2 tsp of salt
  • 2 tsp of dry quick rise yeast
  • 2 tbsp Greek yogurt
  • 1 cup of cold water

Procedure for Pita Bread

  • Mix all the dry ingredients, then add the yogurt and water.
  • Knead the dough until smooth.
  • Let it rise for 1 hour.
  • Make 10 cm/4-inch diameter round pieces and place them on a baking sheet lined with parchment paper.
  • Bake for 15 minutes at 200 C/ 390 F.
  • Remove from the oven and place on a cooling rack.

Bake the pita until golden brown.

Procedure for Greek Salad:

  • Wash and cut all the vegetables then place them into a bowl.
  • In a small bowl mix the olive oil, vinegar, salt, pepper, pressed garlic, and one tsp of oregano. Then pour over the vegetables.
  • Place the feta slices onto the salad and dribble some olive oil over the cheese and sprinkle the second tsp of oregano over the feta.

Procedure for Tzatziki Dip:

  • In a small bowl mix all the ingredients.
  • Serve the dip alongside the salad and the pita bread. The bread can either be dipped into the dip, or it can be sliced open and filled with the dip and the salad.

Instead of using crumbled feta, sliced feta presents itself nicely. Use a sharp thin knife or a wire cutter.
