Greek Yogurt Muffins - The Cheese Shark

This recipe makes a deliciously light muffin. It goes great with tea or coffee. Enjoy it plain or topped with jam or honey. Try it out with your homemade Greek yogurt!

Greek Yogurt Muffins

Ingredients:

  • 1/2 a cup of butter or margarine
  • 3/4 cup of sugar
  • 1 tsp of vanilla extract
  • 2 eggs
  • A pinch of salt
  • 2 3/4 cups (650 g/ 1.5 lb) of Greek yogurt. You can use any fat level of Greek yogurt or any other thick yogurt-like Bulgarian style or Skyr.
  • Lemon peel from half an organic lemon
  • 4 cups of all-purpose flour
  • 1 tsp of baking soda or baking powder (since the yogurt is acidic, both will work)

Procedure:

  • Preheat oven to 180 C/ 355 F.
  • Mix all ingredients except the flour and baking soda. Use a kitchen mixer.
  • Then add the flour and the baking soda and work it until it makes a moist batter.
  • Grease the muffin forms and fill with the batter. Fill each form to the rim.
  • Bake for 25 minutes .
  • Take them out of the forms and place them on a cooling rack.
