Cheese mousse makes great appetizers. The right mixture of sharp cheese, yogurt, and cream yields a fluffy, and tasty topping for potatoes, avocados, or crackers.

Cheese Mousse with Nugget Potatoes

Makes 18 servings.
Preparation time about 20 minutes

Ingredients:

  • 9 nugget potatoes cut in half
  • 4 tbsp of Greek yogurt
  • 3 tbsp of finely grated Parmesan
  • 1 cup finely grated Tilsit cheese, or another aged, rind ripened cheese of your choice
  • 1/2 tsp of Dijon mustard
  • 1/2 tsp of salt
  • Pepper to taste
  • 3/4 cup of whipping cream, whipped until stiff

Utensils needed:

  • Fine cheese grater
  • Kitchen mixer
  • Whisk
  • Medium sized pot
  • Pastry bag

Procedure:

  • Boil the potatoes until soft. Let them cool to room temperature.
  • Cut potatoes in half and place on a plate
  • In a medium bowl mix the yogurt, Parmesan and Tilsit with mustard, salt, and pepper. Whisk well.
  • In a large bowl beat the whipping cream until stiff. Mix into the mousse.
  • Fill the pastry bag and garnish the potato halves. 
  • Garnish the mousse with fresh or dried herbs, a drop of hot sauce or finely chopped red peppers.
