Eggplant Cheese Rolls - The Cheese Shark

Eggplant fried in olive oil goes great with goat cheese or cream cheese. This appetizer is easy to make and will impress your guests. A mixture of cheese and sun-dried tomatoes is spread on an eggplant slice, then rolled up. A great looking and delicious appetizer or snack. Try it out with your homemade cheese!

Eggplant Cheese Rolls

Makes 18 servings.
Preparation time about 20 minutes

Ingredients:

  • 1 eggplant 
  • 1 cup (140 g/ 5 oz) of goat cheese or cream cheese
  • 1 cup of sun-dried tomatoes
  • 2 garlic cloves
  • 1 tsp of chopped basil
  • Olive oil
Utensils needed:
  • Large frying pan
  • Kitchen blender or food processor
  • Cooking brush or rubber spatula
  • Cutting board and a sharp knife
  • Tooth picks

The ingredients in the kitchen blender. 

After blending the paste is ready.

Procedure:

  • Add cheese, sun dried tomatoes, garlic and basil to a food processor or kitchen blender
  • Add 1 tbsp of olive oil and blend until smooth. Transfer to a bowl and set aside
  • Slice the eggplant into ¼ inch thin slices
  • Brush olive oil on the slices and salt slightly
  • Add 1 tbsp of olive oil to a frying pan and fry the eggplant slices on medium heat until soft
  • Transfer the fried slices on a cutting board or large plate
  • Add 1 tsp of paste  along the center of  each slice
  • Roll the eggplant slice and secure with a toothpick
  • Serve fresh or refrigerate for later use

The fried eggplant slices are ready for the paste

A coloured toothpick can make the rolls decorative
